Chino's in the new happening neighborhood on the western side of Hong Kong Island is what happens when you mix Japanese ingredients with Mexican street food, served with chopsticks. The matching-making by a former Nobu Hong Kong chef, a Filipino who grew up in Los Angeles, works.
