Tsujita LA and its Annex across the street are artisan ramen-noodle shops whose specialty is tsukemen (skeh-men), a thick soup simmered for 60 hours and served separately from a bowl of cold noodles. Instructions come with meals. Aficionados find some variations between the two locations and give the nod to Annex, which is open 11 am to 11:30 pm daily. Cash only.
